20-Minute White Bean Chili |

Ingredients
1 c Chopped onions 1 Clove garlic; minced 1 tb Vegetable oil 1 lb Ground turkey 1 cn Stewed tomatoes; (14 1/2 -ounce) 1 c Chicken broth or low sodium -chicken broth 1/2 c Grey Poupon? Dijon Mustard 1 tb Chili powder 1/8 ts Ground red pepper; (up to -1/4) 1 cn Cannellini beans (15 ounce); -drained and rinsed 1 cn Corn (8 ounce); drained Tortilla chips; shredded -cheddar cheese, and Cilantro; optional
Directions
In 3-quart saucepan, over medium-high heat, saut?? onions and garlic in oil until tender. Add turkey; cook until done, stirring occasionally to break up meat. Drain. Stir in tomatoes, chicken broth, mustard, chili powder and pepper. Heat to a boil; reduce heat. Simmer for 10 minutes. Stir in beans and corn cook for 5 minutes. Top with tortilla chips, shredded cheese and cilantro, if desired.
